The Cellar

Without a doubt, one of the elements that stands out from the original barn is the cellar, pure natural stone and manual brick. 

Wine was once made in the barn, as evidenced by the handcrafted ceramic vats that have been restored. 

A great effort was made to deepen it and restore the stone and brick.

Today it is the restaurant’s wine warehouse with local, national and international references. 

There are lovely views of the illuminated wine cellar from the dining room through the glass floor.

During the day sunlight shines on the original wood beams, the columns of handmade bricks and stone walls.

At night, LED lighting illuminates the crystal cupboards and shelves.

The Garden and Vegetable Garden

A green lawn is a luxury in Los Monegros, which is why we only planted it on the top part of the 800m2 garden.

Almost all of the vegetation is a decorative vegetable garden of vegetables and herbs which we use in the dishes of the restaurant.

In the bottom part of the garden we transplanted a century-old olive tree which we saved from the saw and palm trees that José María planted from seeds from our travels around the world.

It’s a space to relax in, with a chill out bed and a jacuzzi.

At our hotel, we are committed to caring for the environment and sustainability.  For this reason, we have implemented various ecological measures that allow us to reduce our environmental impact and offer a more sustainable experience to our guests.

We have 40 photovoltaic panels for the production of electricity in a clean way. 

In addition, we use a pellet stove and a wood oven, both efficient and environmentally friendly systems, to keep the house warm and cozy throughout the year.

For domestic hot water (DHW) and the jacuzzi, we use an aerothermal system combined with solar panels, thus optimizing the use of renewable energies and providing maximum comfort with minimum energy consumption.

Our commitment to nature is also reflected in our organic garden, where we grow fresh and healthy products. 

To maintain soil fertility, we use natural composting, thus contributing to the life cycle of our resources and reducing the need for chemical fertilizers.
